The #1 thing to do: make sure you know what market you're aiming it at. Make its scope too broad and nobody will be satisfied.

Who are you intending to run the class for? Complete beginners, players just under your own strength, who?

well... you did ask

I'd make sure they know all the rules (en passant, touch move etc)
then basic mates
Then basic tactical motifs and mating patterns
id then go through simple chess by stean and other tactical ideas
id then go through michael de la masa's ideas on doing loads of tactics and stress his ideas on how to think Id also tell them about good chess sites.

I basically did all this and i became a club standard player in time controlled chess, and have beaten very, very good players IRL friendly games and online.

I taught a beginner with this method and he improved rapidly.

How many people attend the chess classes that use video projectors?
