If you limit yourself to using option 18 on the DGT 2010 then you can use the clock in exactly the same way as an analogue clock (but with the added benefit of having increments). So (say) after 40 moves have been played in 90 mins with a 30 sec increment you could change to whatever additional time...

I have had games adjourned in the Hastings Xmas morning tournament (continuation after a break for lunch), British U125 (also to be continued after lunch) and a Berks & Bucks Congress rated section (1st phase of games played in morning or afternoon and adjourments in the evening) all in the 2nd half...

I think the display always shows hours/ minutes/ seconds left which is a plus over the 2010 and will avoid the occasional mishap where blitz games are set with times in hours and minutes rather than minutes and seconds.

I don't think the ECF does do rating of byes or defaults due to non appearance, so they won't appear on the site?

He was a tough, but friendly opponent. On the grading database my score against him is one draw (at Paignton in 2019) and 2 earlier losses. I also recall playing against him at Hastings in the 1990s and I expect he won those too!

Any notation has to include the (relatively rare) case of increments only being used in the final period. Perhaps 40/120+0;20/60+0;G/0+30 is sufficiently general to cover all possibilities. I understand what you are trying to achieve with your event (and why you are doing it) but "Open" is a misnomer for your top event (because it isn't open to all comers). You should really call it something else!
