There's the ECF which has a turnover high enough to be subject to VAT although not strictly speaking a business with entrepreneurs. There are also the various book publishers although most of them are trading names of parts of larger operations.

It could be argued that every GM, and every IM for that matter, that makes a living (almost) exclusively from chess is an entrepreneur, at least if self-employed.
