I like forward facing knights too , it feels more like they are looking towards the enemy rather then the subversive sidewards fashion some players choose to set up in.
Having said that, the sideways knights is infinitely preferable to the one forward and one sideways that some eccentrics choose (I usually like to "adjust" those)

Also, no matter how the knights are deployed have you ever noticed that they always end up facing forwards once they actually start moving, no mater what the player.

I agree. I have experimented with having them pointed at my opponent's king, which may be a little over the top.

Kasparov screws the pieces into the board when he moves.

I think the bishop is his favourite piece for doing that.

Lots of ways to upset certain opponents. Those that make adjustments ought to verbalize first. Those constantly may annoy near opponents.
Try the nuclear option & reverse their knights.

And what about the four notches in the top of each rook? Do you prefer them pointing due N, E, S and W? Or NE, SE, SW and NW? Even harder question to answer for those old-fashioned sets where the rooks had six notches apiece ....

When adjusting their knights on the board, Caruana rotates them so that they face his opponent, Carlsen so that they offer their profiles, looking either left or right towards the centre of the board.
